SALMON AND MANGO CEVICHE

When summer is at its peak and the heat feels almost endless, all we really want is something fresh to cool us down. Our bodies, and let’s be honest, our minds too, start craving flavors that are light, zesty, and just a little sweet. That is exactly where this salmon and mango ceviche comes in. It combines the brightness of citrus, the sweetness of ripe mango, and the delicate texture of fresh salmon into a refreshing dish. Even better, it is healthy, simple to make, and ideal for those moments when you want to surprise friends and family with something special.

INGREDIENTS


2 (5 oz) skinless salmon fillets, cut into small cubes
¼ cup freshly squeezed lemon juice (about 1 small lemon)
¼ cup freshly squeezed lime juice (about 2 large limes)
½ red onion, thinly sliced
½ mango, peeled and diced
2 radishes, finely diced
2 small jalapeños
Fresh cilantro leaves
Sea salt
Drizzle of olive oil

INSTRUCTIONS


STEP 1
Cut the salmon into small cubes and place it in a Rosa bowl. Gently toss with lemon and lime juice,then sprinkle with sea salt. Cover and refrigerate for 20 minutes to 1 hour, allowing the citrus to gently cure the fish.

STEP 2
Just before serving, prepare the toppings: slice the onion, dice the mango, radishes, and jalapeños.

STEP 3
Arrange the marinated salmon on Summer Bliss plates, spooning over a bit of the citrus marinade.

STEP 4
Top with the onion, mango, radish, and jalapeño mixture. Finish with fresh cilantro leaves and a generous drizzle of olive oil.
